Our Story
In 1985, Thom and Kathy Coker opened the doors of T.C. Eggington’s as a humble breakfast eatery on Alma School Road in Mesa, Arizona.
The husband-and-wife team dreamed of creating a cozy, welcoming spot where neighbors and families could gather over hearty brunch classics. From day one, they focused on homemade quality – every omelet, muffin and sandwich was crafted from scratch using cherished family recipes and the freshest ingredients
The result was an instant local favorite that blended the comfort of a country kitchen with the warmth of genuine hospitality.

A Vision of Hospitality and Quality
Customer-first service was the heart of our vision. We treated each guest like family, often saying they viewed the restaurant as an extension of our homes.
This meant friendly faces, personal greetings and making everyone feel comfortable at their table. Of course, hospitality went hand-in-hand with great food. Our team believed that the secret to a great restaurant is simple: fresh, flavorful meals and excellent service delivered by a caring staff.
By holding true to these core values – warm hospitality and high-quality, from-scratch cooking – T.C. Eggington’s built an identity as a place where you’re always welcomed with a hot cup of coffee and a smile.
Decades of Eggcellent Brunches
Over the next three decades, T.C. Eggington’s grew into a beloved Mesa institution. What began as a small breakfast café blossomed into a legendary Brunchery, thanks to loyal patrons and word of mouth. The restaurant garnered numerous accolades along the way, repeatedly recognized as one of Mesa’s best spots for breakfast and lunch. From “Best Breakfast” honors in local media to top rankings on travel sites, the awards piled up – a testament to the consistent quality and care put into every plate. Through it all, T.C. Eggington’s stayed true to its roots, maintaining the same charm and personal touch that we strived for from the very beginning. Regulars returned year after year, bringing new generations in to share in traditions like the popular english muffins and seasonal omelets, all served with the restaurant’s signature friendliness and attention to detail.

A New Chapter in 2021
In 2021, after 36 years of success, the founders decided to pass the torch to a new owner and begin T.C. Eggington’s next chapter. They entrusted their passion to a like-minded restaurant team with deep roots in the industry – a group that operates other popular eateries, including a well-loved local Mexican restaurant, Garcia’s, and even Eggington’s Wyoming and California.
Importantly, the transition came with a promise to the community: nothing would change in the experience that guests know and love.
The new owners pledged to uphold the same great food, service and spirit that defined T.C. Eggington’s success.
Today, as the restaurant continues to thrive under new stewardship, long-time customers and first-time visitors alike can expect the same warm welcome and delicious, made-from-scratch meals that have made T.C. Eggington’s a Mesa favorite for decades. The story of T.C. Eggington’s carries on, honoring the original vision and values while looking forward to many more years of eggcellent dining ahead.
